Vegetable Bow Tie Skillet

This seems to be one of my kids' favorite dinners. They're Doctor Who fans, so go figure they like the bow ties. But it is good and a great way to get some vegetables in their diet.

1 pound of ground beef
2 table spoons of minced garlic (yes, we like to eat a lot of garlic ;) )
4 cups of water
4 teaspoon of beef boulion or 4 cubes
3 cups of bow tie pasta
2 teaspoon of Italian seasoning
2 teaspoon of Chili powder
1 teaspoon of salt
1/2 teaspoon of black pepper
1 yellow squash
1 zucchini
2-14.5 oz canned diced tomatoes
1 cup or 4 ounces of shredded cheese (any cheese works but my kids like cheddar the best)

1. In a large skillet, cook beef and garlic over medium heat until the meat is no longer pink; drain. Stir in water, beef boulion, pasta and seasonings. Bring to a boil. Reduce heat; cover and simmer for about 15 minutes.
2. Add yellow squash and zucchini; cover and cook 2-4 minutes longer or until the pasta and vegetables are tender, stirring occasionally. Stir in tomatoes, cook for 2 more minutes and then sprinkle with cheese.
